Chapati
Serves 10.
Ingredients:
- 2 cups whole wheat flour
- 1 tsp salt
- 3/4 cup hot water
- 2 tbsp olive oil
- 2 tbsp ghee
Directions:
- In a large bowl, stir together the whole wheat flour and salt. Use a wooden spoon to stir in the olive oil and enough water to make a soft dough that is elastic but not sticky. Slowly add the hot water and then knead the dough on a lightly floured surface until it is smooth. Let rest for an hour.
- Divide into 10 parts or less if you want bigger bread. Roll each piece into a ball. On a lightly floured surface, use a floured rolling pin to roll out the dough until very thin like a tortilla.
- Heat a skillet over medium heat until hot, and grease lightly. When the pan starts smoking, out a chapati on it. Cook until the underside has brown spots, about 30 seconds, then flip and cook the other side. Continue with remaining dough.
Spirulina Hummus
Makes 3/4 cup.
Ingredients:
- 1 14 oz can of chickpeas, drained
- 1/2 cup water
- 2 tbsp tahini
- 1 tbsp olive oil
- 1 tbsp fresh Spirulina
- 1/4 tsp asafoetida
- 1 tsp cumin
- 1 tbsp lime juice
- salt, pepper

- Add all ingredients to a blender and mix until smooth.
